quick avo and smoked salmon lunch

You’ll be done in 10 minutes, but full for the rest of the afternoon.

INGREDIENTS

  • 2 slices grainy bread, toasted

  • 1/4 avocado

  • 50g smoked salmon

  • Sprinkling of your fave herb - dill goes perfect with this.

METHOD

Spread avo over both slices of toast. Divide smoked salmon evenly between both slices. Top with herbs.

*Note - the smoked salmon can be a little pricey to buy. Current price at Woolworths is $5.50 for 50g. The total cost for this recipe is approx. $7 - still cheaper than take away. If you’re on a strict budget this week, go for a can of tuna instead, which will drop the price to approx. $4.50.
